Early portion of the ride takes you thru south central Pasco County and just south of Zephyrhills, home of a very large skydiving air port. Watch the sky for falling people! Traveling south on SR 39 thru Crystal Springs you will cross the Hillsborough River.
Passing north and east of Plant City, home of the annual Stawberry Festival and home of the largest monthly bike fest in florida, all pretty rural riding.
SR 640 is one of the most scenic roads in the south central florida area, fiurther east you go the more rolling the road gets.
After crossing US 27 you inersect with SR 17 Scenic Highway, the name says it all, rolling hills, lakes, etc. 
Downtown Sebring is one of those pituresque settings next to the lake.
Be sure to visit the Kenilworth Lodge while in Sebring. Built in 1916 and overlooks Lake Jackson.

Leaving Sebring you pass thru Highlands Hammock State Park. WARNING: THERE IS A COUPLE MILES OF UNPAVED ROAD. It is well maintained and hard packed, easy to ride. After leaving the park you will be very rural riding until reaching the small town of Zolfo Springs:
History of Zolfo SpringsIn the early 1800's a crew of Italian and Spanish men came down the Peace River dredgening for phosphate. When they arrived at the springs, which smelled strongly of sulphur, the Italians named them Zolfo for the sulphur water there. That is how Zolfo got its name. The first settler in the area was David D. Mahan. He took up residence in Zolfo in 1878.In 1886 Florida Southern Railroad opened a depot in Zolfo. A post office was established on May 26, 1886.The first council meeting was held October 18, 1901. The Town was incorporated in 1904 and held its first official Town Council Meeting on October 18, 1904.On September 13, 1909 the name was changed to Zolfo Springs. General Store in 1912:

Once reaching the town of Ona, you will turn north on Ona Road (CR 663) and follow the r/r tracks, switching back and forth one side then the other, depending on which side they were able to buy r/w for the road.
At SR 62 you make a quick jog left then right again on CR 663, now called Brewster Road and then Green Springs Road. Still doing the r/r thing until reaching SR 37.
Take time in downtown Plant City and follow the signs for the historic district.
I noted this as a one day trip, but we have mad the trip a weekend before and spent the night in Sebring, plenty to do and see.
